"Moniker" is a slightly fancier word for "nickname," so they basically have the same meaning :) However, in terms of nuance and usage, I think "moniker" is used when giving someone an unusual nickname (like a nickname that is not derived from their real name but from a certain skill they have or something they remind you of.)
For example:
A man named James might have the nickname "Jim." If he wrestles alligators, he might have the unique moniker "Gator."
A girl named Elizabeth might have the nickname "Liz." If she smiles a lot, she might have the moniker "Smiley."
A woman named Anastasia might have the nickname "Stacy." If she's dainty and soft-spoken like royalty, she might have the moniker "Princess."
You could use them interchangeably, and English speakers will still understand what you mean, but I think it would sound more natural if you understand the slight difference between them before using them :)

Q:
We call Takahata-san by his nickname "Paku-san." Actually, I'm not really sure where it came from. By nature, he had trouble waking up in the morning. When he started working in Toei doga (or Toei Animation), he would often rush into work at the last minute. After punching in, he would munch (paku-paku) the bread he had brought, and drink some water directly from the tap. Supposedly that's the reason for his nickname: "Paku-san". это звучит нормально?
