Both sentences are plausible.

“The word” is more common and is sort of implying that the Bible contains everything God has said and that everything in it was said by God.

The “words” is saying that the Bible contains passages such as, “and then God said (whatever)”, and passages such as, “and Jesus said (whatever)”

“The Word” is language from within Christianity. (1) See the beginning of the gospel of John, and (2) People within evangelical protestantism sometimes refer to the Bible as “The Word”. So, we are talking about the language within Christianity, not the English language in general.
